These banana crumb muffins are a family favorite. My youngest daughter Kirstin cannot keep her fingers off them. I personally like to eat them for breakfast with a warm cup of coffee or just as a snack. Ingredients: 1 1/2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 3 bananas, mashed 3/4 cup white sugar 1 egg, lightly beaten 1/3 cup butter, melted 1/3 cup packed brown sugar 2 tablespoons all-purpose flour 1/8 teaspoon ground cinnamon 1 tablespoon butter Directions: 1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers. 2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups. 3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. 4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean. Final best kept secret step is cover the muffins while they are still warm to contain moisture.
I love to cook and bake and so does my husband Ed. We just plain like food! Sometimes we compete on who is the better cook. He thinks that he is, I let him think that he is. Ever since meeting my husband I have been introduced to so many more foods then before. I guess you usually eat what you grow up with, anyway that is how it was for me. I realized growing up I didn’t really eat seafood or very much meat. In our home, we had our regular meals of Schnitzel, goulash and Spätzle. My Oma didn’t like sea food and would always express her disgust of it, I think that I also thought I didn’t like seafood. Growing up I stated that I did not like sea food. Oma would say; “Was der Bauer nicht kennt frist er net”, translating pretty much to “What the farmer doesn’t know, he does not eat”. Now we have fish and crab at least once a month! Over the years of being married I have collected over 100 recipes that are family approved. I’ve typed, printed, and copied them all into a book I made myself. Our children have all received copies of our family’s favorite meals, including grandma Darlene’s famous banana bread.
